The tomahawk is a bone-in ribeye with the full rib bone left intact — typically 36–45oz and built for a moment. Cut from the rib primal with extra-long frenched bone, it's one of the most visually dramatic steaks in the case and one of the most flavorful. Hand-cut from USDA Prime Black Angus in our shop to order.
Note: Final weight is determined at time of cutting in store and will vary by bone length.

The bavette, also called flap steak or sirloin tip, is a butcher's cut that has earned a devoted following in NYC steakhouses and bistros. Cut from the bottom sirloin, it shares the deep, beefy richness of the skirt and hanger steak but with a slightly broader surface and firmer texture. Exceptional with chimichurri, red wine reductions, or a simple herb butter.

The domestic Wagyu ribeye is an exercise in excess — in the best possible way. Extreme intramuscular marbling transforms what is already the most flavorful steak on the animal into something approaching a different category of beef altogether. Rich, buttery, and deeply satisfying. Cut to order in our shop from select domestic Wagyu rib sections.

Butcher's Tip: Cook to medium-rare only. A brief, very hot sear is all it needs — the fat will do the rest. Portion sizes are typically smaller than standard ribeyes given the richness.
Domestic Wagyu brings the extraordinary intramuscular fat of Japanese cattle genetics to American beef production — the result is a New York strip with marbling levels far beyond standard USDA Prime, yielding a meltingly rich, luxurious eating experience. Each strip is hand-cut in our shop from carefully sourced domestic Wagyu loins.

Butcher's Tip: Less is more. Season with salt only. Sear in a dry or lightly oiled pan — Wagyu renders its own fat. Medium-rare to medium is ideal; the fat becomes greasy if overcooked.
Cut from the center of the tenderloin, filet mignon is the most tender and refined steak in the case. These center-cut portions are prized for their uniform shape, fine grain, and exceptionally buttery texture. Lean yet incredibly soft due to minimal muscle use, they deliver a clean, delicate beef flavor that pairs beautifully with simple seasoning or rich accompaniments. A classic steakhouse favorite, perfectly portioned for an elegant and consistent cooking experience. Our butchers cut each filet in-house for precision and quality.
