FAQs

We are a family owned and operated butcher shop, run by Paul Vaccari, the third generation of his family to run Piccinini Bros. in New York City’s Hell’s Kitchen neighborhood, and his wife Sylvie Vaccari. We’re a full-service butcher counter that also has an online shop, so you can get an old-fashioned butcher shop experience – the highest quality hand-cut beef, poultry, pork, and more, sourced from our most trusted farms – with the convenience of delivery to your doorstep!

We’re truly passionate about what we do and are committed to artisanal butchery:

  • We have over 100 years of experience in the meat business, starting from when Paul’s grandfather opened the shop in 1922.
  • We meticulously choose quality over quantity and cost-effectiveness.
  • We cut every order by hand, the way you want it, while always staying true to the traditional methods of ageing, curing, and cutting meat
  • We care about the details, which is why we have such high standards about who we buy from and how long we age our meat for
  • We offer the ease and convenience of online ordering and next-day delivery
  • Freshness: Products don’t sit on shelves - they are moved in and out the same day
  • Quality: Meat is all we do, we have more than a century of experience, relationships directly with farmers we know, and can answer all of your questions!
  • Value: You might find different cuts that you’ve never tried, at better prices
  • Experience: Butchers like ours are one of the last old New York retail experiences!
  • Safety: We have a USDA inspector on site every day.
  • Family-owned: We are a family owned, for 3 generations, meaning your dollars go right back into your community

You can find us at 633 9th Avenue, (Between 44th and 45th Streets),New York, NY 10036, in New York City’s Hell’s Kitchen neighborhood.

Our Products

The vast majority of products that we sell are fresh and have never been frozen. A small selection of our products, like some of our sausages, are frozen to ensure that they remain at their peak freshness. If a product is frozen, this will be specifically stated within the product description.

Some of our products are organic, such as our organic chicken from XXX, organic beef from XXX, and organic eggs from XXX.  We will specifically state that a product is organic in the product description.

We have a wide variety of Halal products, including grass-fed beef, veal, lamb and Australian wagyu beef. We will specifically state that a product is halal in the product description.

No, we never needle, inject, or mechanically tenderize our steaks. All of our steaks are cut and prepared by hand with little to no machine processing.

USDA (United States Department of Agriculture) is a rigorous certification process guaranteeing the quality and safety of meat. All of our meat is butchered, weighed, packaged and delivered daily from our third-generation butcher shop right here in New York City. We can do this because we’ve been awarded coveted USDA Prime certification. We’ve worked hard to gain this prestigious accreditation and we’re proud of it. There’s a full-time USDA inspector on site at Piccinini Brothers – they even have their own office! Receiving full USDA certification (no mean feat) allows us to receive, butcher, cut, package and deliver meat—all from one location.

Beef grading is a classification system that assesses the various characteristics of an animal to determine the quality. Early in the process of breaking down cattle, government graders give that animal a grade based on metrics including: marbling (or “frosting” as it is known in Japan), which tends to indicate better flavour, the age of the animal, the size and the shape of each of the muscles, and the amount of fat that covers the muscle. In the United States, the highest grade is Prime, followed by Choice and Select.

Grass-fed and corn-fed refer to the type of food that an animal eats in its lifetime. Generally, an animal that only eats grass is not going to develop as high of a grade as an animal that eats a fattier diet. A very lean diet without corn, grain or wheat will result in a lower grade and very lean meat, which is often not as flavourful. Corn, barley, wheat, and grains tend to be higher in carbohydrates, and as a result, a healthy animal will bulk up and provide more flavourful meat. It’s important to remember that feed is only part of an animal’s upbringing, and that farmers typically feed their animals what is most readily available given the seasons. For example, in the United States, where we grow a lot of corn, or in Japan, where they grow a lot of rice and sweet potato, this is what they tend to feed their animals, respectively.

Wagyu is simply any of the original breeds of Japanese cattle. Meat cut from these animals is known for its intense marbling, high quality, and rich flavor. Kobe beef is a very particular strain of Wagyu called Tajima-Gyu that is raised to strict standards in the Hyogo Prefecture. Kobe is the capital city of Hyogo, thus the name.
