Ground fresh from grass-fed bison — a lean, richly flavored alternative to ground beef with a clean, slightly sweet flavor and significantly lower fat content than conventional beef. Bison is one of the most nutritionally dense red meats available: higher in protein, lower in fat, and free of the hormones and antibiotics common in conventional beef production.

Bison | Grass-fed | Ground in-house
Leaner than beef | High protein
Fresh never frozen
Butcher's Tip: Cook to an internal temperature of 160°F. Bison cooks faster than beef due to lower fat content — pull it 5–10°F earlier than you normally would with beef. For burgers, medium to medium-rare is ideal. High heat for a short time produces the best result.
Bone-in goat shoulder — a specialty cut for those who cook Caribbean, Latin American, South Asian, and Middle Eastern cuisines where goat (cabrito, birria, curry) is the star. Goat shoulder is lean with a distinctive, slightly gamey flavor that is more intense than lamb. Low and slow cooking is essential to develop tenderness.

Butcher's Tip: Marinate 12–24 hours with bold spices — achiote, chili, citrus, garlic. Braise at 300°F or slow-roast at 275°F for 4–6 hours to an internal temperature of 195°F+. Excellent for birria, jerk goat, and curry.
Whole rabbit — a lean, mild, versatile protein with a flavor closer to chicken than to game. A staple of French, Italian, and Spanish country cooking, rabbit is one of the most sustainable and underutilized proteins in the American market. Our butchers can break it down to your specification on request.

Butcher's Tip: Rabbit dries out quickly — braise it. Sear the pieces, then braise at 300°F in white wine, mustard, and cream for 1.5–2 hours to an internal temperature of 165°F until completely tender. The saddle cooks faster than the legs — add it later in the braise.
A rich veal demi-glace for intensifies the savory profile, while juniper berries and green peppercorns bring refined spice and a uniquely balanced character.
Whole pheasant — a classic British game bird with lean, pale, distinctly flavored meat that falls between chicken and wild game. Pheasant is best treated with care: it dries out quickly without barding (covering with fat) or braising, but prepared correctly it delivers a refined, gamey elegance that few other birds can match.

Butcher's Tip: Lay strips of bacon or fatback over the breast before roasting to prevent drying. Roast at 400°F to an internal temperature of 165°F (approximately 45–60 minutes). Alternatively, braise at 300°F in cider and cream for 1.5–2 hours for a moist, elegant result.
