The magret — a whole, skin-on Moulard duck breast from Hudson Valley, one of the premier duck producers in the country. The Moulard is a large, meaty hybrid breed raised for foie gras production, and the breast carries the deep, rich flavor of a well-fed, well-raised bird. Larger and more intensely flavored than Pekin duck, the magret is the fine dining standard for seared duck breast.

Butcher's Tip: Score the fat cap in a crosshatch pattern without cutting into the meat. Start in a cold pan, fat-side down, over medium heat. Render the fat for 8–10 minutes until golden and the fat layer has reduced by half. Flip and finish to an internal temperature of 135°F for medium-rare. Rest 5 minutes. Duck breast is best served medium-rare to medium.

Rich | Deeply flavored
Fresh never frozen
Butcher's Tip: Cook ground duck to an internal temperature of 165°F. The higher fat content means it browns beautifully and doesn't dry out. Season boldly — duck can handle strong flavors: orange, ginger, five spice, and juniper all work well.
Our whole Pekin duck is tender, flavorful and perfect for roasting, especially with citrus, honey or five-spice glazes. Crisp the skin, roast until the meat is rosy and carve for a beautiful centerpiece. A classic choice for holidays, dinner parties or special at-home meals.
