Berkshire pork, known in Japan as Kurobuta, is the Wagyu of the pork world. This heritage breed produces pork with exceptional intramuscular fat, a deep rosy color, and a rich, complex flavor that standard commodity pork simply cannot replicate. Our Berkshire pork chops are hand-cut in our shop from bone-in loin sections, delivering a thick, well-marbled chop worthy of a great steakhouse.
Custom thicknesses available on request. Note: Final weight is determined at time of cutting in store.

Butcher's Tip: Thick-cut, bone-in chops to showcase their superior marbling and flavor.
Spare ribs trimmed to the classic St. Louis cut — the cartilaginous sternum end and the flap removed for a uniform, rectangular rack that cooks evenly and presents beautifully. Our butchers do the trimming in-house, and the trimmings are available separately as rib tips.

Trimmed in-house
Fresh never frozen
Butcher's Tip: Smoke at 225°F for 5–6 hours to an internal temperature of 195–203°F. The uniform shape makes them ideal for competition-style barbecue. Apply sauce only in the last 30 minutes to avoid burning.
Fully cooked in-house and ready to reheat or finish on the grill. Our pre-cooked whole racks take all the work out of rib night without sacrificing flavor — seasoned, slow-cooked to tender, and ready for a quick hit of heat and sauce whenever you need them.

Fully cooked in-house
Ready to reheat or finish on grill
Butcher's Tip: Reheat covered in foil at 300°F until warmed through to 140°F internal temperature (approximately 25–30 minutes). Uncover and brush with sauce, then broil or grill for 5 minutes to caramelize.
Cut from the belly side of the rib cage, spare ribs are larger, meatier, and fattier than baby backs — and for many pitmasters, the superior rib. The extra fat renders beautifully over a long cook and produces a deeper, richer result. Our butchers can St. Louis-trim them on request for a cleaner, more uniform rack.

A bone-in Berkshire pork rib roast, the rack left whole and presented as an impressive standing roast. The Berkshire rib section offers the best marbling on the entire loin, and roasted on the bone it develops a rich, self-basting quality that makes every slice extraordinary.
